I started using a fresh Outlook version. I can’t discover a way to automatically add myself as CC or BCC to emails I send, or how to add a copy of all sent emails (by me) to my inbox. I tried looking for answers on the internet, but they all refer to previous versions of Outlook. Is there a method to achieve this, or should I go back to an earlier version of Outlook?

Based on your requirement we have checked from our side with New Outlook for Windows, and seems this feature is not available in new Outlook for windows. At the same time, you may try the work around to revert back to classic Outlook, you may switch the toggle off in the new Outlook and it will automatically open the classic version.
And, if you are Microsoft365 business user, you can also create mail flow rule from Admin center (To set up transport rules, admin permission is needed, if you are not the admin, please contact the admin to set the rule for you.)
